Meatless Monday – Creamy Chia Seed Pudding
Make Memorial Day All About Desserts!
The past weekend has been spectacular because my grandson prince has arrived from Berlin Germany with my eldest beauty! I know that one of the best ways to create a special bonding in the kitchen with my grandson is through a yummy dessert! Excitement galore- in full swing!
Today is Memorial Day and I would like to share the yummy dessert, which my grandson and I have enjoyed so much- the Creamy Chia Seed Pudding!
This all-star energy-packed oh-so-creamy chia pudding is decadent-tasting yet healthy at the same time. As we all know from my previous Meatless Monday recipes, chia seeds are the tiny magical things I call superfood. The seeds are full with vitamins, minerals, and amazing antioxidants that protect your body from free radicals, prevent cancer, and fight aging. Chia seeds also contain a great deal of protein than other whole grains, and it is a wonderful source of fiber.
This chia seed pudding creation is infused with vanilla and cinnamon, adding a more sophisticated tang to your palate. Of course, this pudding is a perfect base for your creativity and imagination for toppings!
Now it’s time to celebrate the good times!
Creamy Chia Seed Pudding
Ingredients
1 cup raw almond milk
2 tbsp chia seeds
¼ cup raw cashews
cinnamon & vanilla, to taste
Fresh fruit for garnish (blueberries, mangos, raspberries)
1 tbsp maple syrup
Instructions
1. Combine all ingredients in a high-speed blender. Pour into a glass jar, cover, and refrigerate overnight.
