Meatless Monday – Citrus Infused Blackberry Chia Pudding

The recently concluded AFAN 26th Annual Black and White Ball in Las Vegas has got me on a different high- amazing entertainment, good food and fabulous people came together to celebrate life and an awesome cause! All the things that created this momentous event are incorporated in my latest Plantfire creation- it’s black, it’s white, it’s fun plus it’s creamy, lemony and of course, so yummy!
The Citrus-Infused Blackberry Chia Pudding is the most delectable and mouth-watering snack, breakfast or dessert you’ll ever come across. Wonderfully refreshing, this plant-based perfection is a must try! This flavorful pleasure is going to be your newest favorite addiction. Quick and easy to make- although it involves 8 hours for the chia seeds to create that ideal consistency, but I assure you, this pudding is worth the long wait!
The super food chia seeds and the anti oxidant rich blackberries are this recipe’s dynamic duo, so to speak. Their powerful combination is absolutely a force to boost your energy, immune system and balance the PH in your body. To add fuel to this fiery nutritional treat is the zesty lemon that is rich in free radical Vitamin C. Delicious and healthy- what more can you ask for? So, allow me to break it down to you- how much health benefits these blackberries can offer…

Citrus-Infused Blackberry Chia Pudding
Ingredients:
1 cup blackberries
½ cup chia seeds
2 cups milk (almond milk or coconut milk in carton not in can)
zest and juice of ½ lemon
½ teaspoon vanilla extract
2 tablespoons maple syrup
Instructions:
- Combine all the ingredients in a large, sealable container. Make sure the chia seeds are mixed in well.
- Let sit overnight or for at least 8 hours.
- Serve cold with your toppings of choice!
