Meatless Monday – Chunky Greek Salad
Delight in Colors and Flavors!
The wonders of all natural flavors in one bowl! The Chunky Greek Salad is absolutely amazing in more ways than one – healthy, easy, yummy and of course, oil and dairy free! Experience the burst of actual goodness in your mouth without the usual salad dressing from this easy to whip up, mixture of fresh chunky veggies!
No other salad can be as mouth-watering than this, simple and light plus the olives and capers offer the right amount of sharpness… And my favorite part? All the wonderful rock star ingredients have complimented each other, yet stood out on its own with its bold flavors. This salad is perfect with your vegan burger, or your pita and healthy hummus or just simply on its own. Allow me to give you why this salad is so healthy and nutritious, starting with my favorite green olives…
Let the magic begin!
Chunky Greek Salad
3 cloves garlic, minced
1 ½ lb. tomatoes, diced (3 ½ cups)
1 medium-sized cucumber, peeled, seeded and diced (1 cup)
½ small red onion, thinly sliced
¼ cup green olives, pitted and coarsely chopped
¼ cup basil, cut into thin ribbons
2 table spoons red wine vinegar
2 teaspoons capers, drained and coarsely chopped
1 teaspoon maple syrup
½ teaspoon lemon zest
Instructions:
- Cook the garlic in a saucepan over medium-heat until fragrant.
- Place all the remaining ingredients in a large serving bowl. Top with garlic and toss. Season to taste with salt and pepper.
- Let stand for 20 minutes to allow flavors to develop. Adjust seasonings if preferred. Serve and enjoy!
