Treat yourself to a one sweet day, minus the sugar with this delectable Chia Raspberry Cookies! This is an exciting plant-based goody that is oh-so-yummy and a super easy way to make a delightful holiday indulgence that doesn’t have refined sugars and unwanted oil. I love how it captured the perfect sweetness, yet very filling with just the right amount of crunchiness!

You can definitely amaze your friends and loved-ones when you tell them it’s homemade. The dates give it the healthy sweetness these mouth-watering cookies deserve.  The flavor from the cashews, oats and vanilla extract give it a tasty cookie sensation! You can also get creative and fun when playing with lots of different combination of fruits for the jam- orange, blueberry, strawberry or your favorite fruit of the season!

Get ready for another snack attack…

Chia Raspberry Cookies

Ingredients:

FOR COOKIES:

2/3 cup raw cashews

2 pitted dates

½ teaspoon vanilla extract

1 pinch Himalayan salt

¾ cup raw or rolled oats

FOR JAM:

½ cup raspberries

3 pitted dates, cut into small pieces

1 tablespoon chia seeds

 

Instructions:

FOR COOKIES:

  1. Combine cashews, dates, vanilla, salt and 1 teaspoon water in food processor. Blend for 2-3 minutes or until thick, chunky paste is achieved. Add oats, and process until mixture starts sticking together.
  2. Roll dough into 20 small balls, then place on baking sheet. Make thumbprint indentations in center of each ball. Refrigerate for 2-6 hours or until firm.

FOR JAM:

  1. Process raspberries, dates and 3 table spoons water in a blender until mostly smooth, but with some chunks or until desired consistency is reached.
  2. Transfer to a small bowl and stir in chia seeds.

FINAL STEP:

  1. Fill each cookie’s indent with 1 ½ teaspoon jam. Store in single layer in sealed container in refrigerator.
  2. Enjoy and indulge!
