Meatless Monday – Cashew Cream Cinnamon Bars
A Post-Mother’s Day Indulgence That Comes in A Bar!
It is not too late to serve Mom a heavenly, show stopping treat, a day after her special day! If you’re looking for some creamy-delicious dessert for mommy, fear not, my Meatless Monday creation has the answer!
Today’s Cashew Cream Cinnamon Bars are actually your fantasy come-alive! What makes these bars unique are the nutritional benefits that only a plant-based recipe can accomplish- minus the sugar! Aside from being healthy, let’s talk about being yummy, as no other raw food can compare! This recipe uses all natural, whole food sugar substitutes, such as dates and raisins to bring in the sweet kick you crave for.
The sweet delicious dates are rich in dietary fiber, which prevents LDL cholesterol absorption in the gut. They are essentially good sources of vitamin-A, which is known to have antioxidant properties and essential for vision. Dates are also an excellent source of iron. Su-weet!!!
On the other hand, raisins are known to relieve people from constipation, anemia, fever, and sexual dysfunction. Raisins are not only good as a stand-alone snack; they also promote good eye and dental care and bone quality.

Cashew Cream Cinnamon Bars
Ingredients:
¾ cup dates pitted and soaked for 4 hours
1 cup rolled oats
1 cup raw cashews
½ teaspoon cinnamon
¼ cup raisins
½ teaspoon vanilla powder (or alcohol-free vanilla)
a dash of sea salt
For The Frosting:
1 cup raw cashews soaked for half an hour in warm water
1 teaspoon vanilla extract
2 tablespoons maple syrup
Instruction:
1. Process the cashews and oats until fine like sand. Set aside.
2. Process the soaked dates until thick and pasty.
3. Combine the oat mixture, the vanilla powder and the dash of salt with the thick date paste, and process all together.
4. Add the raisins and process, just until mixed.
5. Press dough into a parchment lined large loaf pan, and place it in the freezer.
For the Frosting:
1. Blend all the ingredients with just enough of the soaking water that is needed to blend.
2. Pour the frosting on top of the crust and place back in the freezer for 2 hours to chill.
3. After two hours, cut into squares and store in the fridge until ready to serve.
