Meatless Monday – Cactus Scramble Tofu
“Tofu-ll” of Flavors!
Get thrilled with this amazing plant-based recipe featuring the flavors of today’s rock stars ingredients! The Cactus Scramble Tofu is something different and super exciting to start a brand new day.
Tofu is basically tasteless in flavor, which makes it the ideal partner for crafting the flavor you desire. Combine with all the flavors of the onion, tomatoes and special spices- this dish is no doubt an incredibly delicious treat for everyone! Plus, add the intriguing and exotic taste of the cactus, your taste buds will fly high with great gastronomic pleasure!
This all-star, easy to follow recipe is going to make your meatless Monday mornings out of the ordinary. Great with a slice of toasted vegan bread, a side of fresh fruits and a glass of freshly squeezed orange juice!

Cactus Scramble Tofu
Ingredients:
1 16-oz. extra firm tofu
1 small tomato, diced
2 tablespoon onion, diced
1 tablespoon cilantro, minced
½ teaspoon turmeric
1 cup diced cactus from a jar
sea salt and pepper to taste
1 jalapeno, seeded and sliced – optional
Instructions:
- Sauté the onion in 2 tablespoons of water for 3 minutes. Add the tomatoes, cactus and jalapeno, then cook for 3 more minutes.
- Scramble the tofu and cook for 5-7 minutes or until liquid is dry. Season with turmeric, seas salt and pepper. Serve and enjoy!
