Meatless Monday – Butternut Squash Hummus
Savor The Savory-Sweetness!
Fall into spring with this delectable Butternut Squash Hummus! This ever so creamy hummus is bursting with all the amazing flavors that is the perfect companion for your healthy snacking. A non- complicated, easy and plant-based recipe that balances the taste of sweetness and savory, which is brought to us by this silky smooth butternut squash.
The roasted butternut squash is combined with the chickpeas, tahini, lemon juice, and some exciting spices like cumin and smoked paprika that will definitely entice your taste buds.
This hummus is a great party feature or just simply a weekend treat! There are so many creative of ways to serve this delicious hummus- for any dipping, pita bread, vegan chips, veggies or even as a base for your pizza or pasta recipe!
Now, it’s time to get this hummus party started! Happy hummus day!
Butternut Squash Hummus
Ingredients:
1 ½ cups butternut squash, diced and roasted
2 15-oz. cans chickpeas, rinsed and drained
1 tablespoon tahini
1 clove garlic
2 table spoon fresh lemon juice
¼ teaspoon cumin
sea salt and pepper to taste
smoked paprika to taste
Instructions:
- Preheat oven to 425.
- Place the butternut squash in a baking sheet covered with silpat for 30 minutes. Remove from the oven and let it cool.
- Blend all the ingredients together until smooth. Serve with veggies, crackers or vegan chips.
