Meatless Monday – Black Beans Buttery Brownie
Best Brownie Ever!!!
Today, I declare – Sweet Tooth Meatless Monday! =)
This super delish, healthy and buttery black beans brownie is hands down the best sweet treat I have made in months! I am even certain that they are so much better than your favorite brownie, so I suggest stop whatever you’re doing and join the fun in my plant-based kitchen right now!
Baking is made so easy in this recipe, just blend all the wholesome ingredients together and then bake! You got yourself a wonderful dessert that will last a week- that is if you can resist the temptation! To create an entire party of sweetness, medjool dates and raw almond butter are my top choice, which are my healthy sugar alternatives. The combination of black beans and the natural cocoa powder is a divine and powerful match. The taste is just simply amazing!
The superfoods deliver all the nourishment that goes with this yummy squared brownie. Chia seeds are packed with Omega 3, protein and fiber, plus a rich source of antioxidants. The black beans on the other hand, is rich in nutrients, vitamins, and minerals, which I’d like to elaborate more…
So let the celebration begin!!!
Black Beans Buttery Brownie
Ingredients:
2 cups black beans, cooked
2 table spoons raw almond butter
10 medjool dates, pitted
½ teaspoon vanilla extract
½ cup natural cocoa powder
1 tablespoon ground chia seeds
Instructions:
- Preheat oven to 200 degrees F.
- Combine black beans, dates and almond butter and vanilla extract in a food processor. Blend until smooth. Add cocoa powder and chia seeds, and blend again until desired consistency is achieved.
- Spread the mixture into a silpat baking mat. Bake for 1 and a half hours. Cool completely then cut into small squares. Serve and enjoy.
*** Can last up to a week when refrigerated.
