Meatless Monday – Artichoke Spinach Burger
I-Hearty-Artichokey!
I am always, always, always, in the mood for fine food! Today, I bring you another lavish foodie experience- one wholesome recipe that is nutritious as well as delicious.
Would you believe that a burger that looks and smells soooo good is a combination of everything plant-based? You are in for a gastronomical adventure, as I serve you this happy meal called Artichoke Spinach Burgers!
A burger with a mix of artichokes, spinach, white beans, oats and some seasonings, plus a kick of a cashew nutty flavor- definitely a winner in the house! The mishmash of all the flavors and aroma from the ingredients seeps through the burger, making you want for more! These burgers are tasty and tender, definitely not the usual processed junk or mainstream hamburger around the corner.
With a little bit of imagination, you can create your own version of this recipe in the pursuit of health and happiness! Toss into the mixture your favorite veggie or seasoning and you might have another fabulous recipe to share. The nutritional bang for your buck in this delectable meal is equated with all the health benefits you get, starting with the artichokes……..
Serve this burger with a side of sweet potato fries or on a bed of fresh garden salad and you have yourself the glory of good food! So for now, I say, bring it on!
Artichoke Spinach Burgers
Ingredients:
1 15-oz can artichoke, rinsed, drained and chopped
1 15-oz can white beans
½ small red onion
2 cloves garlic
2 cups fresh spinach
2 cups oats (or more if needed)
2 cups cauliflower florets
2 carrots
½ cup raw cashews
1 tablespoon Italian seasoning
sea salt and pepper to taste
Instructions:
- Place in a food processor the beans garlic, artichoke, spinach and oats. Then transfer to a bowl when desired consistency is achieved. Set aside.
- Place in a food processor the carrots, cauliflower, and cashews. When they become creamy, add to the bean mixture. Mix everything together. Season with Italian seasoning and add sea salt and pepper to taste.
- Mix and mash all together. Make patties according to the size you want. Cook in a grill pan for about 3-5 minutes on each side. Serve and enjoy!

Where is the artichoke?
OOOPS! Forgot to add them in my ingredient list! Thanks for catching that! Its one 15 ounce can of rinsed, drained and chopped artichoke.

Would there be a way to make these without nuts? What would a good substitute be or just omit?
Hi Carin,
You can easily omit the nuts and just add in a bit more oats,beans or cauliflower to make the mix the same serving size as original recipe. You could make this recipe a dozen different ways just by getting creative with different beans and different begins too! You could also try adding a little sunflower seeds for a nuttier consistency if you have a nut allergy – Either way with or without the nuts …These burgers are amazing and healthy.
