Hominy Salad w/ Basil-Shallot Vinaigrette |
- 1 small shallot, minced
- 2 TBS white wine vinegar
- 1/4 cup fresh basil, finely chopped
- 1 15-oz. can white hominy, rinsed & drained
- 1 1/2 cups frozen lima beans, thawed
- 1 cup grape or tear-drop tomatoes, halved
- 1 small yellow bell pepper, diced
- ground white pepper, to taste
- sea salt, to taste
- Whisk together the shallot and vinegar in small bowl.
- Whisk in the basil, and add white pepper and salt to taste.
- Toss together hominy, lima beans, tomatoes, and bell pepper in a serving bowl.
- Drizzle with dressing and toss again to coat.
- Serve & enjoy!
