Bella’s Chocolate Pumpkin Bites
Bella’s Chocolate Pumpkin Bites |
- 1 15-oz. can pumpkin
- 2 cups rolled oats
- ½ cup carob chips or vegan chocolate chips
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 3 dates
- Pre-heat oven to 350 degrees.
- Soak dates in hot water for 1/2 hour.
- Process 1 cup of oats to make into oat flour.
- Remove oat flour and set aside.
- Add pumpkin, cinnamon, pumpkin pie spice & dates to processor and process until smooth.
- Add all ingredients to a bowl and mix well.
- Shape mixture into balls (about 1 TBS of mixture each).
- Place on a Silpat or non-stick cookie sheet.
- You may sprinkle some extra cinnamon on top if you’d like.
- Bake for 20 minutes.
