Bella’s Brownie Soup |
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 15-oz. can diced tomatoes
- 2 cups brown rice, cooked
- 2 carrots, chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 2 red potatoes, chopped
- 2 stalks celery, chopped
- 1 TBS Italian seasoning
- 1 15-oz. can kidney beans, drained & rinsed
- 1 15-oz. can cannellini beans, drained & rinsed
- Water sauté onions and garlic for 3-5 minutes or until onions are soft.
- Add carrots, squash, zucchini, potatoes and celery and cook for another 5 minutes, adding water as needed to sauté.
- Add tomatoes, vegetable broth and seasoning and simmer for 15 minutes or until vegetables are tender.
- Add cooked brown rice and beans, heat through.
- Salt and pepper to taste.
