Your Sweet Tooth Is Calling!

Now a confession. My craving for sweets has created a sanguine effect on me lately. Don’t get me wrong- the sweets I’m talking about are the healthy-type ones, which are of course plant-based! Plus I have always been a fan of the raw, no-cook movement hence; I have produced my own version of this recipe, my signature In The Raw Pecan Bars.

It is incredible how delicious they are. They are so simple and easy to make, which only takes a few minutes combining all the ingredients together and then viola, a taste of heaven! With the help of pure maple syrup and vegan dairy-free chocolate chips, this is absolutely the healthy way to get your sweets fix! I just love it! Plus these pecan bars are not loaded with sugar, I certainly recommend you try it as a breakfast bar. Perfect as a pre morning workout kick because of the energy it gives to the body. Since we are on the subject of its health and nutritional benefits, allow me to disclose why eating pecans are good for us…

Are you ready to be blown away? It is totally amazing!

In The Raw Pecan Bars

Ingredients:

1 ½ cups raw pecan halves

½ cup oats

1/8 teaspoon pink salt

3 tablespoons pure maple syrup

1 teaspoon vanilla extract

2-3 tablespoons vegan (dairy-free) chocolate chips

Instructions:

  1. Combine the pecans, oats and salt in a food processor and blend until powdery with some pieces.
  2. Add the maple syrup, vanilla extract and chocolate chips in the food processor and pulse until large clumps form and the mixture holds when pressed together with your fingers.
  3. Line a loaf pan with parchment paper. Press the mixture into the pan, spreading out evenly to the corners. Overlap the paper and press down really hard. Place in the freezer for about an hour before slicing. Slice into bars. Keep stored either in the fridge or freezer or serve it right away!

    I just made these Raw Pecan Bars and I knew when I started that I should’ve made a double batch! I couldnt even wait till they froze. Delish! Need to go buy more pecans!
