A Feast of Full Bright Colors and Flavors!

Get ready for a refreshingly good and energizingly delicious no oil no sugar slaw that is bound to be the next star attraction on your dinner table! Mixing all the fall colors from these wonderful fruits and veggies to create this recipe will give the whole family a feast to adore and savor!

The Fall Confetti Slaw is the perfect side dish for every meal, not to mention a fantastic add on to your vegan burger or sandwich! However, in the interest of full disclosure, let me announce that this slaw was first titled as “the kids didn’t like it salad!” LOL! So what do you do when your top customers are not satisfied? Put on your thinking cap and press your imagination button into full gear! Now, it was such a blast creating this confetti-colored slaw! In the end, the kids loved it because the red cabbage mixes well with the sweetness of the apple and the tang of the orange bell pepper that burst into an amazing flavor and texture! The final verdict- a two thumbs up from the whole family!

Preparing this mouth-watering slaw is so convenient and easy. Not to mention all the healthy benefits that you can get from all the rock star ingredients, starting with the red cabbage…

Fall Confetti Slaw

Ingredients:
3 cups coarsely grated red cabbage
1 medium orange bell pepper, thinly sliced
1 apple, cored and cut into matchsticks (1 ¼ cups)
1 cup cilantro leaves, chopped
3 tablespoons fresh orange juice
2 tablespoons apple cider vinegar
1 tablespoon maple syrup
2 teaspoon Dijon mustard
Instructions:
1. Toss together cabbage, bell pepper, apple, and cilantro in a large bowl.
2. Whisk together remaining ingredients in a small bowl. Drizzle dressing over cabbage mixture, and toss to combine.
3. Season with salt and pepper if preferred.
