Meatless Monday – Green Curry with Tofu and Broccoli
A Heavenly Curry Creation
Discover the quick, easy, and yummy curry dish that is exceptionally appetizing! There was no oil and no dairy involved in serving this broccoli-tofu plant-based deal of a meal.
This super delish curry creation is a meal that the whole family can enjoy – because of its flavor, and because of the fact that they offer superb nutrition. There’s something irresistible about all these crunchy veggies- broccoli and zucchini mixed together with a piquant taste of curry. It is really super delicious, no matter whenever or however you wish to serve it! You can serve this over brown rice or mixed with gluten free noodles. Plus you can add any fresh ingredient you want in the mix, and viola!
Healthy is one of the factors that this dish carries! Let me give you an overview of the health benefits of one of the rock star ingredients of this recipe, the broccoli:
Let your curry cravings begin!
Green Curry with Tofu and Broccoli
Ingredients:
1 zucchini, diced
½ napa cabbage, shredded
1 bunch broccoli, separated into small florets (about 4 cups)
2 tablespoon thai green curry paste
1 (14 ounce) can coconut milk, light
14 ounces extra-firm tofu, drained and cut into 1-inch cubes
16 scallions, thinly sliced (diagonally)
½ cup cilantro, coarsely chopped
Lime wedges for garnish
Instructions:
1. Saute broccoli, zucchini, and cabbage in ½ cup water, stirring constantly for 1 minute.
2. Add curry paste and stir well to combine.
3. Add coconut milk and bring to a boil.
4. Cook a few minutes longer, until coconut milk has reduced and thickened slightly, and veggies are tender-crisp.
5. Add tofu cubes and warm through. Add salt if needed.
6. Remove from heat and stir in half the scallions and cilantro.
7. Serve at once over rice bowls, garnished with remaining scallions, cilantro and lime.
