Meatless Monday – Fresh Mint Chocolate

There’s nothing like a taste of heaven in a bite of chocolate! The Fresh Mint Chocolate is 100% plant-based treat that is perfect to satisfy any sweet cravings. Richly flavored, with a hint of mint, yet light as air, this is one of the best ways to end a meal.
Quality chocolate-recipe that is filled with lots of healthy-liciouness because the chocolate chips are vegan! You definitely want your kids to grow up with a taste for better things… and so here is the answer! This recipe will also provide the health benefits of another rock star ingredient, which is the mint!

Fresh Mint Chocolate
Ingredients:
½ cup chocolate chips, vegan
1 tablespoon fresh mint, minced
fresh mints for toppings
Instructions:
1. In a double boiler, melt ½ cup vegan chocolate chips.
2. Add the 1 tablespoon fresh minced mint to the melted chocolate.
3. Fill mini-cupcake containers of the chocolate mixture, then add 1 small leaf of fresh mint on top.
4. Chill for 1 hour.
Serve and enjoy! =)
