Meatless Monday – Caramel Almond Bites
Let me make this short and sweet!
My energy was in full throttle as I continue to inspire for 3 years in a row, everyone who participated in the Annual Health Healing and Happiness Conference the past weekend! I have shared straight-forward solutions and motivations to get passed the common excuses in living a Fire-Driven Life! Check out my Facebook Fan Page for some great photos too! Plus my signature sweet treat for everyone was there- in the form of a plant-based Caramel Almond Bites! No oil, no dairy and no sugar awesome dessert!
Of course, I am going to share this deliciously healthy dessert to all of you who was not able to attend the conference via my Meatless Monday! I’m sure that your palate will be in heaven while you simultaneously fuel your body with this nutty treat! Totally raw and 100% guilt-free! This yummy dessert is packed with vitamins, minerals, protein and fiber courtesy of the amazing almond nuts! Almonds are also rich in vitamin E, copper, magnesium, and high quality protein.
Here’s the ticket to your sweet indulgence!
Caramel Almond Bites
(Makes 30 bite-sized pieces)
Ingredients:
1 cup raw almonds
½ cup dates (pitted)
1 ½ tablespoon chia seeds
½ cup of unsweetened dried coconuts
2 tablespoons of maple syrup
1/8 teaspoon of caramel extract
dash of seasalt
Instructions:
1. In a food processor, grind the almonds. Then add the dates and keep grinding until dates are mixed with the almonds.
2. Add the rest of the ingredients in the food processor. Continue grinding until all ingredients are combined.
3. Transfer to a bowl and roll it to make bite-sized balls.
4. Chill in the fridge or you can serve right away and enjoy!
