Meatless Monday – Cucumber Relish

The weekend went by quickly, as they always seem to do! I am so thrilled to bring you another amazing Meatless Monday recipe- my very own Cucumber Relish!
This recipe is so easy to prepare + no cooking required and it’s a perfect appetizer, side dish, snack, meal, and more! The flavors here layer. They do not clash. Like a symphony, they do come together for a grand finale.
This recipe boasts of healthy rock star ingredients headed by my favorite crunchy cucumbers! Allow me to give you two impressive health benefits that cucumbers carry:
1. Cucumbers flush out toxins. All that water in cucumber acts as a virtual broom, sweeping waste products out of your system. With regular use, cucumber is known to dissolve kidney stones.
2. Stabilizes blood pressure. Patients of blood pressure, both high and low, often find that eating cucumber brings relief.
Now, isn’t this a healthy choice?
So, without further ado….
Cucumber Relish
Ingredients
1 cucumber, peeled and diced
½ cup red onion, diced
1 jalapeno, cored, seeded and minced
2 tbsp white vinegar
1 package truvia
Instructions
1. Mix everything together in a bowl.
2. Cover and chill at least 2 hours before serving.
3. Mix again before serving.
