Cucumber Quinoa Salad
Cucumber Quinoa Salad |
- 1 ½ cups quinoa
- ⅓ cup sunflower seeds
- 1 cucumber (2 1/2 cups), peeled, seeded, finely diced
- 3 Roma tomatoes (3/4 cup), seeded & finely diced
- ½ small red onion (1/2 cup), finely chopped
- ½ cup fresh parsley, chopped
- 3 Tbs lemon juice
- 2 tsp grates lemon zest
- 6 radishes (1/2 cup), thinly sliced
- sea salt & pepper to taste
- Bring 2 quarts of water to a boil.
- Add quinoa, cover, & reduce to medium-low heat.
- Simmer for 12-14 minutes or until quinoa is tender.
- Drain & rinse with cold water, then drain again.
- In a small pan over medium heat, add sunflower seeds & toast for for 3-4 minutes or until lightly browned.
- Add seeds to quinoa; stir in cucumber, tomatoes & parsley.
- Fold in lemon juice & zest.
- Season with salt & pepper to taste.
