Meatless Monday – No Bake Oatmeal Raisin Carrot Cake Bites

Once again, let me present another delightful dessert- guilt free and with zero calorie counting! A one of a kind plant-based creation comes your way in this sweet bite-sized indulgence, combining all the healthy ingredients that only my Plantfire kitchen can serve!
The No Bake Oatmeal Raisin Carrot Cake Bites will surely rock your taste buds while putting a happy smile on your face, because this recipe is super easy, totally straightforward, and completely perfect!
The cake bite itself is sweet and divine, and with the addition of Raisins and Carrots, you are definitely in for an energy kick. Raisins and carrots can give you a quick boost of energy when you are feeling sluggish- without weighing you down.
The raisin is rich in natural sugar, hence the energy! It is also a good source of iron, which supports your immune system. Raisin is also rich in potassium, which helps lower blood pressure by limiting the effect of sodium.
The carrot is known as the “ultimate health food.” It is loaded with Vitamin A, which promotes good vision. Carrot is also rich in Beta Carotene, a cancer-fighting agent!
Now get ready to be blown away!
No-Bake Oatmeal Raisin Carrot Cake Bites
Ingredients
½ cup dry old-fashioned oats
1 small carrot, chopped
½ cup pitted medjool dates
¼ cup raisins
1 tsp cinnamon
1 tsp vanilla extract
A dash of ground ginger
Instructions
1. Place all ingredients (except the raisins) in your Vitamix (or any food processor will do) and blend until all ingredients are combined. Do not over blend.
2. Remove the mixture, and add in the 1/4 cup raisins using your hands.
3. Roll into balls and store in the refrigerator if desired before serving.
4. Serve and enjoy!
