Meatless Monday – Cannellini Hummus
A Basic White Bean Hummus Like Never Before!
In today’s Meatless Monday recipe we have the oh so creamy, perfectly savory, basil infused Cannellini Hummus! The Cannellini bean is extremely popular in Italy and more specifically in Tuscany.. trust me, within your first bite you’ll get whisked away to an Italian paradise of flavor! (We also love the Cannellini Bean because it’s high in protein and fiber and low in fat!)
Read below to get the ingredients and instructions for this delicious recipe! I bet you’ll be surprised at some of the unique flavors we’re bringing into the mix!
Ingredients:
1 15 oz can cannellini beans, drained and rinsed
1 tbsp fresh lemon juice
1 tbsp tahini
1 clove of garlic
1 ½ tbsp. red wine vinegar
½ tsp Dijon mustard
sea salt and pepper, to taste
2 tsp fresh thyme, roughly chopped
2 tbsp fresh basil, torn or roughly chopped
1/2 tbsp water (may not need, just to thin dip as desired)
Instructions:
1. In high power blender, combine all ingredients except water, thyme and basil. Puree until smooth, gradually adding water as desired to thin dip and scraping down sides of bowl as needed. Add thyme and basil and puree briefly to incorporate ingredients.
2. Serve and enjoy!
