Meatless Monday – Strawberry Crunch Salad

Let me share some wonderful health benefits of a few of the ingredients with you-
Strawberries: Widely appreciated for their fragrant aroma, bright red color, juicy texture and sweetness. But more than that, they 
provide a valuable source of anti-oxidants, anti-inflammatory properties, and amazing combination of phytonutrients.
Pistachios: Among nuts, pistachios are one of the most nutritious and are an excellent source of Vitamin B6, copper, manganese, phosphorus, magnesium, fiber and potassium.
Green Apples: There’s a lot of truth to the saying that an apple a day will keep the doctor away. Most people know they are loaded with vitamins and minerals and are sweet & sour in taste, but did you also know that they can reduce blood pressure, help stabilize blood sugar, and helps in treating a variety of ailments such as rheumatism and gout?
Here is your super summer strawberry salad! (Try to say that 5 times fast)
Ingredients:
1 cup Fresh Strawberries
2 1/2 cups Spinach
1/2 lemon Lemon
1 Green Apple
1/2 cup shelled Pistachios
1/2 cup Tangerines
1/4 cup Fresh Basil
Pepper, to taste
Preparation:
1. Put spinach in the bowl, as your base
2. Chop the strawberries and put them in the bowl
3. Chop the green apple in small pieces then add it
4. Sprinkle some pistachios
5. Now for the dressing:
a.) cut the lemon into wedges, then squeeze the juice in the salad, and
b.) squeeze the juice of the tangerines in the salad as well
6. Top it with some fresh basil
7. Put in some fresh cracked pepper to season

This is what happens when you shoot several videos during the summer and then release at the end of summer:)…But Fear not…exchange any orange citrus instead of the tangerine. We actually still have strawberries in our Las Vegas Farmers markets and Wholefoods but you can easily exchange the strawberries for your favorite berry or apple instead…think of my recipe as an idea..but with your creative input you can alter it to create an equally delicious salad!
