Meatless Monday – Avocado Cilantro Toast
This Recipe is Downright Hass-ome!
This simple, delicious and nutritious recipe is the perfect pairing of creamy avocado, sweet tomatoes, pungent cilantro, and a little bit of lemon to tie it all together. Top this creation on to your favorite sprouted-grain bread and you’ve got yourself the perfect go-to meal!
Avocados are beloved for their buttery texture, mild to the pallet taste, and multiple uses, but they are so much more than a scrumptious snack! While avocados have a high calorie count (one avocado is 320 calories), the various nutrients and healthy fats make it a must-eat.
Some call the avocado the alphabet fruit because of all the vitamins it contains. One avocado provides your body with vitamins A, C, E, K and B6, along with an enormous amount of potassium.
Fun Facts: Avocados are commonly referred to as the Alligator Pear because of their scaly skin. Did you know that approximately 53.5 MILLION pounds of guacamole is consumed every Super Bowl Sunday?

Ingredients:
Hass Avocados
Organic Cilantro
Lemons
Micro greens (optional)
Chopped Cherry Tomatoes
Toasted sprouted grain bread
Salt and Pepper
Jalapeno slices (optional)
Crushed red pepper (optional)
Instructions:
1. Slice the avocado in half, remove the pit, remove the skin. Add Avocado to bowl and mash.
2. Add the cilantro, chopped cherry tomatoes, squeeze 1/2 of 1 lemons juice, add sea salt and pepper, to taste. Mash the ingredients together.
3. Spread the mixture onto toasted sprouted grain bread.
4. (optional) add the micro greens on top.
5. Serve and enjoy!
