Curried Bean Sandwich Spread |
- 2 15-oz cans white beans, drained & rinsed
- ¾ cup water
- 1 onion, finely chopped
- 1 cup celery, diced
- 1 green bell pepper, diced
- ½ cup carrot, diced
- 1 to 2 cloves garlic, minced
- 2 ½ tsp curry powder
- ½ tsp ground cumin
- 1 TBS soy sauce
- Place the water in a saucepan, add all of the vegetables and garlic.
- Cook, stirring occasionally for 15 minutes.
- Stir in curry powder, cumin, and soy sauce, mixing well.
- Remove from heat, add beans and mix well.
- Place the mixture in to a food processor or blender and process briefly until chopped, but not pureed.
- Chill before serving.
- Use as a spread on sandwiches or stuff into a pita pocket.
