Cinnamon Apple Rice Pudding |
- 1 cup vanilla soy milk
- 1 TBS cornstarch
- 2 cups cooked brown rice
- 1/3 cup agave nectar or maple syrup
- 1/3 cup raisins
- 1 tsp cinnamon, plus more for garnish
- 1 tsp vanilla
- 1 apple, cored & thinly sliced
- Preheat oven to 300.
- Whisk milk and cornstarch together in a medium saucepan.
- Add cooked rice, maple syrup, raisins, and cinnamon.
- Simmer over medium heat 3 minutes, stirring constantly.
- Remove from heat and stir in vanilla.
- Transfer mixture to a baking dish.
- Top with sliced apples & sprinkle with cinnamon.
- Bake for 10 minutes, then remove from oven.
- Can be served warm or cold.
