I have the solution…
It’s that time of year again! Beautiful and delicious ruby red pomegranates are gracing my mom’s pomegranate trees in her backyard. Guess who is one of the lucky recipients to receive said pomegranates?……Me, of course! At last count, I had over 30 of these vitamin and antioxidant rich beauties gracing my fruit basket in the kitchen. If you’re like most people, you enjoy fresh pomegranate seeds over a salad or the decadent nectar as a juice…BUT…getting those delicious seeds out of their shell is almost not worth it! Yes, you can pay a premium to buy already de-seeded pomegranates at the super market, but why?

Not sure what to do with your seeds once you have them? Try sprinkling them over your favorite salad, add them to your favorite smoothie, top off your favorite cocktail or let them be the crowning glory to your favorite rice dish!
If you end up with too many pomegranate seeds to enjoy before they go bad, just pop the extra seeds in the freezer…they will stay for a good six months in a ziplock freezer bag!
