Grab your sombrero and watch your taste buds do the happy dance as you enjoy one of my family’s all-time favorite recipes. The Fiesta Mexican Rice Bowl is so delicious and is the foundation for what could be dozens of various dinners based around this one meal. In the beginning of my own Plantfire (plant-based) journey, I was looking for meals that were insanely easy to prepare as well as meals that would satisfy my entire family. Anyone who has children…and a husband… knows how challenging it can be to make everyone happy at the dinner table. I happen to love foods and flavors from many different cultures, but I have always had a special love affair with the South and Central American flavors…in plain English… MEXICAN food baby! So taking a que from some of my favorites…bean and rice burritos, as well as all of the delicious fresh veggies that accompany the meal, I created the Fiesta Mexican Rice Bowl… Brown rice as a base with a never ending possibiliy of options to create a tummy-tickling meal that will have everyone doing the Macarena!

Remember that we only actually need a few favorite meals and recipes a week… We are creatures of habit, right? As you enjoy this week’s video recipe, please remember that unless you’re baking, most recipes are just a guideline…let your mind get creative…interchange different ingredients, omit or add ones…this is your meal and you are the creative art director in your kitchen!

 

 

Fiesta Mexican Rice Bowl

2 cups of cooked brown rice

1 16-oz. container of fresh salsa

1 can of black beans, rinsed & drained

1 cup corn, frozen

1 cup of broccoli, finely chopped (about 1/c per head)

2 cups of fresh spinach

1/2 onion, finely diced

1 green pepper,  finely chopped

1 avocado, sliced

cilantro

 

Cook brown rice first.

In a large pan on medium heat, add the cooked brown rice.

Mix in frozen corn, black beans, onion, green pepper and salsa.

Make sure to not over cook… you simply need to just warm the ingredients in the pan.

When finished heating, serve the rice mixture over a bed fresh spinach and top with more salsa, fresh cilantro and sliced avocado.

*The Mexican Fiesta Rice mixture also goes well stuffed in a whole wheat tortilla.
