One of my favorite fruits has to be the watermelon. Not only is it super low in calories and filled with vitamins & antioxidants, it also brings back beautiful summer memories of backyard BBQ’s and watermelon seed spitting contests with my siblings… yes… I said spitting contests… I am from Kentucky after all.

This particular recipe idea came to me when I went to my refrigerator to enjoy some of the left over watermelon that had been previously cut up and I discovered that the fruit was heading south… My watermelon had seen better days. Being the ever thrifty and creative woman that I am, I decided to place the sad watermelon in my Vitamix with some of my fresh mint that I had growing in my backyard along with some ice to create a watermelon treat… The verdict?! AMAZING!! The whole family lined up for a taste of my latest goodness in a glass. I hope you enjoy this refreshing beverage as much as I do.
Refreshing Watermelon Mint Cooler
2 1/2 cups of watermelon, chopped and seeded
1 cup of ice
3-6 mint leaves (I love mint so we added extra…)
Blend all ingredients together in blender.
For added elegance, please serve in wine glasses.
