Nothing says Spring like a Sweet and Tangy Pineapple Salad
As the weather warms up and spring finally arrives, my intense desire to eat even more fresh raw salads turns into high gear. This delicious recipe was created one afternoon when I had more mint growing in my backyard than I knew do with and a hankering for some pineapple. With just a few simple ingredients, an unexpected house favorite was born!

Sweet & Tangy Pineapple-Cucumber Salad
- 3 cups chopped fresh pineapple
- 2 cucumbers, peeled, seeded and sliced
- 2 green onions, thinly sliced
- 1/4 cup roughly chopped mint
- 1/4 cup lime juice
- In a large bowl, gently toss all ingredients together and serve.
Fun facts and uses for one of my favorite fruits:
1. It takes almost 18 months for a pineapple to grow to full size.
2. Pineapple is the symbol of friendship and hospitality… The next time you’re invited to a friends for dinner or drinks, why not bring a beautiful pineapple instead of the standard bottle of wine.
3. Bromelain is a protein-digesting enzyme that is only found in pineapples. Bromelain is believed to have anti-inflammatory effects.
4. When carving your pineapple be sure to save the stem and chop up to juice or put in your smoothies.
5. When Pineapple is in season and on sale be sure to buy extra so that you can chop up the pineapple and store in freezer bags for delicious tropical smoothies!
How to pick the perfect pineapple:
1. The smell is the number one way to tell if you have picked the perfect pineapple. It should have a nice sweet smell.
2. Pineapples don’t ripen after being picked, so pick with the intent to enjoy in the same day or two of bringing home.
