The grilled sweet potatoes will now be your favorite canvass to your nacho cravings. Topped with the best tasting and nutritious veggies- beans, avocado, corn and cilantro, plus a kick of the light vegan cheese sauce, what more can you ask for?
Crispy and finger lickin-good Sweet Potato Nachos is the oh-so good appetizer, or the happy friendly snack or it can be that breathtaking full on meal- you decide… your choice!

Sweet Potato Nachos
2 large sweet potatoes, sliced into thin rounds
½ cup vegan cheese, sauce
3 scallions, chopped
1 large handful of fresh cilantro, chopped
½ cup black beans
½ cup corn
1 avocado, peeled and diced
- Reheat the Panini grill. Cook the sweet potatoes for 10 minutes or until crisp.
- Remove the sweet potatoes from the panini grill and sprinkle the cheese sauce, beans and corn on top. Then sprinkle the cilantro, scallions and avocado on top. Serve and enjoy!
Ingredients and Instructions for the Cashew Cheese
1 cup cashew nuts, soaked in warm water for 30 minutes
1 clove garlic
1 tablespoon fresh onion
2 tablespoons fresh lemon juice
1/2 cup roasted red pepper
1 1/2 tablespoon nutritional yeast
– Strain and rinse the cashew nuts. Then blend all the ingredients together adding some water. Cover and blend well, if you decide to add more water for your desired consistency, you may do so.
