Full Salad-Swing In The Spring!

It’s that time again for fresh salads and I have got the perfect Veggie Delight that will thrill your taste buds to the max! The vital element to this exceptionally healthy salad is its super fresh ingredients.

It’s the ideal salad for this season when all these vibrant veggies- peppers, cucumber, radish are within your reach. Love the crunch the broccoli and peppers it gives! Plus the extra kick of spice from the radish adds excitement into the flavor, and the presence of the fresh strawberries creates a little sweetness. Then, an oil-free, and sugar free special dressing to bring it all together… so, what more could you ask for?

Limit not your creativity in this veggie salad- you can also change up some ingredients depending on what’s available and add some fruits for more sweetness. Experiment on the dressing and toppings too, and I tell you the possibilities are endless!

And now, it is time to eat the rainbow!

Spring Rainbow Salad


1 orange bell pepper, diced

5-8 radishes, thinly sliced

1 small broccoli head, chopped small

1 cucumber, diced

2-3 tablespoon fresh basil, chopped

¼ cup fresh parsley, chopped

¼ cup raw sunflower seeds, shelled

¼ cup raw hemp hearts, hulled hemp seeds

1 cup strawberries, diced


***Oil-Free Dressing

1 garlic clove, minced

2 tablespoon red wine vinegar

1 tablespoon apple cider vinegar

juice of 1 lemon

1 tablespoon Dijon mustard

1 tablespoon pure maple syrup

sea salt and pepper to taste



  1. Whisk all the dressing ingredients in a small bowl. Set aside.
  2. In a large bowl, combine all the salad ingredients.
  3. Pour the dressing over the chopped veggies and toss well.
  4. Put the salad in the fridge and let it cool.
  5. Toss the salad to evenly coat then serve.
