This recipe is all about the nuts, with a beautifully sweet and chocolatey taste without the unwanted fats and sugar, with a touch of crunchy and crispy that transform into the perfect cookie!

The Crispy Chocolate and Nuts Cookies are so enticing and they really taste incredible! These plant-based cookies are tremendously quick and super easy to make, just shoot everything in the blender, form it and bake it- and there you have it, a super delish brekky, snack or dessert that will make every single bite made in cookie-heaven.

And it gets better, as you discover how healthy this cookie recipe is! The nuts are just simply amazing- walnuts are a good source of omega 3 fatty acids and the almonds boost your energy as well as your memory. The super food chia seeds are high in protein, while the flax seeds are a good source of fiber. And the sweet thing about dates…

This cookie recipe definitely offers a flavor that matches no other, so indulge and let the good times roll!

 

Crispy Chocolate and Nuts Cookies

Ingredients:

1 cup almonds

1 cup walnuts

1 cup buckwheat flour

4 tablespoons maple syrup

½ cup medjool dates, pitted

2 tablespoons cacao powder

2 tablespoons chia seeds

1 tablespoon ground flax seeds  soaked in 1/3 cup of water

 

Instructions:

  1. Put the nuts in a food processor until it formed a flour consistency.
  2. Add the dates, then process a little, then add the rest of the ingredients, blend again until sticky cookie dough has formed.
  3. Scoop about a tablespoon of the mixture and shape them into a cookie with your hands.
  4. Place the cookie dough on a cooking sheet covered with silpat.
  5. Bake for about 17-20 minutes until firm, and slightly brown. Let it cool before serving!
