A Cool Fresh Cucumber Creaminess!
An uncomplicated salad that is worth obsessing over, presenting the Cucumber Ribbon Salad with a delightful Creamy Dill Dressing! Sounds good? Well, it tastes even better!
This is a very refreshing and invigorating salad, with a touch of tanginess, sweetness and a lot of goodness that is low in fat, gluten and dairy-free, no oil, no sugar and completely plant-based. The cucumber and avocado create an ideal combination, being one is rich and the other light, and they play off each other flawlessly like peanut butter and jelly! This recipe is a celebration of fabulous greens on your plate and palate. The dressing is made with a mixture of the avocado, lime juice, garlic and dill- hitting the target with wonderful flavors. Play with your imagination and start getting creative, if you’re not into creaminess, you can do an Asian-type of dressing, very similar to my Japanese Sweet and Tangy Salad recipe.
A superb salad that is so tasty and full of healthy benefits for your body and mind. Avocados are heart-healthy and are good for expecting mommies! Plus they aid in digestion and regulate cholesterol level. The cucumbers are good for our skin, plus all these amazing benefits…

Cucumber Ribbon Salad with Creamy Dill Dressing
3 large Persian cucumbers
1 medium avocado
1 tablespoon lime juice
2 tablespoon fresh dill, chopped OR 1 tablespoon dry
1 clove of garlic
sea salt and pepper to taste
- Spiralize the cucumbers to create ribbon strands. Place them in a colander, sprinkle with sea salt then strain for 30 minutes and then pat dry.
- Blend avocado, lime juice, garlic, dill. Season with salt and pepper. Add water to get the consistency you like, then blend again.
- Mix the cucumbers and dressing together. Serve cold.
