Let’s Have A Mexican Food Trip!

Are you in the mood for some Mexican healthy food? I got you covered in this latest #MeatlessMonday treat courtesy of this oh-so good and flavorful Mexican Quinoa Dish, plant-based style of course!

A very versatile dish because it can be served on its own as a main course, or as a side dish. Adding creativity, you can put this in a tortilla or a taco and present this delicious dish to your family and friends! So healthy, filling and fresh that’s appetizing to the eyes as well as to the palate!

Make this super easy Mexican meal at home- uncomplicated and super quick to prepare! This is one healthy alternative to your rice meal, since quinoa adds more protein and fiber, plus it’s gluten free, not to mention tastes great when combined with all the spices and ingredients to bring out this mouth-watering Mexican flavor! If you feel like being more adventurous- you can try putting in some chili powder or tapatio to add a little kick of spiciness! This meal is a nutrition powerhouse because of all the health benefits your body can get, starting from my favorite avocados…

Mexican Quinoa Dish


2 cups quinoa, rinsed and drained

2 cups water

juice of 1 lemon

sea salt and pepper to taste

1 15-oz can black beans, cooked, rinsed and drained

1 cup cooked corn

3 tomatoes, diced

2 tablespoon fresh cilantro

2 slices avocado

jalapeno slice for garnish (optional)



  1. In a pot, cook the quinoa with the water, lemon juice, sea salt and pepper for about 15 to 20 minutes.
  2. Serve in a bowl and garnish the quinoa with all the remaining ingredients.
