A Taste of Magic!
A super simple yet powerful cuisine that’s bursting with flavors! This Magical Shroom & Spinach Soup is definitely a winner. This bowl of goodness is all about being hearty and warm, and I’m sure you are going to love the soothing feeling that it provides.
It is so full of all the satisfying and delicious plant-based ingredients, which also contains so many nutrients in one serving. The mushrooms, combined with the garbanzos and spinach created a perfect homey and comforting mood. The taste and aroma will earn you a two-thumbs up approval from family and friends.
A very nourishing recipe as it boasts of so many healthy ingredients. The mushrooms are a good source of B vitamins and potassium. Mushrooms are so healthful and some have been known to be a little magical too! =) The spinach gives you the fiber and vitamin K that your body needs. The vibrant tomatoes are packed with beta-carotene that fights cancer. The garbanzo beans- our amazing little friends because of the health benefits they provide…..
You can serve this dish either for lunch or dinner, on its own or with a side of brown rice or quinoa, as it is so versatile and yummy! Let’s begin our delicious day, shall we?
Magical Shroom & Spinach Soup
3 tomatoes, chopped (OR 1 15-oz can of tomatoes)
1 15-oz can of garbanzo beans, rinsed and drained
1 18-oz pack of mushroom, sliced
8-oz pack of fresh spinach
½ red onion, sliced
1 clove of garlic
1 cup vegetable broth
sea salt and pepper to taste
- Sauté in water the onion for 3 minutes.
- Blend the tomatoes with the clove of garlic and vegetable broth.
- Transfer in a pot, then cook for 5 minutes. Then add garbanzo beans and mushrooms. Cook for another 5 minutes. Add the spinach, then season with salt and pepper.
