There are 3-F’s that go with today’s #MeatlessMonday recipe… The dish is called Ceviche De Mango Con Jicama Tostadas because it’s all about Freshness, Fun in the kitchen, and of course being Fabulous with this amazing super light delicacy!
Traditionally, ceviche is a dish of raw fish marinated in citrus juices. Therefore, my plant-based version will be a union of the most famous and celebrated flavors of fruits and veggies of summer! Be smitten by the brightness of colors of the mixture and tanginess of the citrus flavors from the mango and lime. The crunchy texture of the jicama and red onion coupled with the creamy avocado will result to a delightful party in your mouth!
A fantastic and versatile dish that can be your main meal, your appetizer or even your dip! It is so easy to make, plus no cooking required. Just combine all the ingredients together, soaked them in the fresh lime juice with sea salt. And as the mixture chills in the fridge, it will be infused with all the amazing flavors from each ingredient. Don’t forget how nutritious this lovely dish is- super packed with lots of vitamins and minerals that your body will ever need. At this point, allow me to tell you all about how healthy jicama is……
Let’s begin the summer party, shall we?
Ceviche De Mango Con Jicama Tostadas
1 mango, diced
1 small jicama, sliced
½ avocado, diced
1 tablespoon cilantro, chopped
2 tablespoons red onion, diced
2 tablespoons fresh lime juice
Himalayan pink salt to taste
Tapatio or your favorite salsa for toppings
- Mix all the ingredients together in a bowl, then season with salt.
- Chill and serve over jicama slices.
