This bowl of Soba Noodles with Green Beans goodness is a terrific summer (or any season) dish that will create a delicious party in your tummy- so yummy so yummy! =) A flavorsome cuisine for all noodle-food lovers, and to those noodle skeptics, I guarantee that they are going to totally love and will be blown away by how amazing this dish is!
The smell in my kitchen while preparing this dish is as good as it tastes! This recipe is made with everyday ingredients- healthy, fresh and appetizing. A very quick meal to assemble- just mix all the ingredients together once they are ready then viola- a star dish on your dinner table! The perfect finishing touch to this bowl of light noodles is the toasted crunchy sesame seeds that bring this dish to the next level of goodness! Plus, you can gain so much from this foodie with all the healthy benefits from all the rock star ingredients starting with the soba noodles!
So, let’s begin our Asian adventure, shall we?
Soba Noodles with Green Beans
1 lb fresh green beans, blanched
½ onion, sliced
1 teaspoon fresh ginger, grated
1 red pepper, diced
low sodium soy sauce to taste
½ pack of 12-oz. soba noodles
1 teaspoon toasted sesame seeds for garnish
- Wash and cut the green beans. Boil for 3 minutes and then put in ice water for 2 minutes. Set aside.
- In a pot, sauté with water the onion for 3 minutes, and add the ginger, the red pepper and the green beans, cook for another 3 minutes. Season with soy sauce.
- Cook the soba noodles according to packet instructions. Rinse well with cool water, then transfer to the green bens mix. Then adjust the flavor with some soy sauce depending ion your taste. Garnish with sesame seeds, then serve.
