Refreshing Chickpea Salad
– 1 15oz. can garbanzo beans, rinsed and drained
– 1 roma tomato, diced
– 1 green bell pepper, diced
– 2 stalks celery, diced
– 1 small shallot, sliced
– 2 tablespoons cilantro, chopped
– 2 small cloves garlic, minced
– juice and zest of 1 lemon
– sea salt and pepper to taste
- Combine all the ingredients in a large bowl, mixing them thoroughly.
- Taste and add additional seasoning if desired.
- Serve it right away and enjoy or you can cool it in the fridge to marinate the flavors even more.
