Let’s Celebrate with a Super Food!
There are so many things to be grateful for, and one of them is food, plant-based of course! That’s why I am so excited to serve you my latest creation, The Festive Quinoa Salad, perfect for the Thanksgiving feast!
This quinoa salad will look so vibrant on your dinner table. It’s colorful, it’s healthy and it’s light yet fulfilling! Plus, the superfood quinoa works marvelously giving a fresh taste and texture to this salad! Time is also of the essence when prepping for the grandest feast… that’s why this salad is super easy, just simply throw all the ingredients together, stir and then indulge in all its amazing flavors! This salad is a perfect blend of the nuttiness of the quinoa, the crunch of the cucumbers and cabbage and the juiciness of the cherry tomatoes!
It’s time to satisfy your cravings….
Festive Quinoa Salad
Ingredients for Salad:
1 cup quinoa, rinsed and drained
½ teaspoon salt
1 ½ cups fresh or frozen corn kernels
1 cup finely chopped red cabbage
1 cup diced cucumber
¼ cup sprouts
¼ cup fresh lemon juice
2 tablespoon pure maple syrup
1 tablespoon Dijon mustard
1 teaspoon salt
1. To make salad: Bring quinoa, salt, and 1 ½ cups water to a boil in saucepan. Reduce heat to medium-low, cover, and simmer for 20 minutes, or until water is absorbed. Set aside covered, 10 minutes.
2. Bring 2 cups water to boil in separate saucepan. Add corn and cook for 1 minute. Drain and rinse under cold water. Drain again. Stir together corn, tomatoes, cabbage, cucumber, sprouts and quinoa in a bowl.
3. To make dressing: Mix all ingredients together until smooth. Stir into salad.
